The fermentation cellar finally hums to life. Professor Itsuki's students roll up their sleeves and get to work on soy sauce, sake, whatever else the tanks will give them, and Tadayasu Sawaki is right there in the middle of it, because he can see the microbes. Actually see them. Little guys floating over the mash, chatting with him like neighbors over a fence. That gift got him into this mess in the first place, and now it is the whole reason the lab runs at all. Then the easy part ends. Brewing is not a school project you can wing the night before. Batches turn, tempers fray, and the motley crew has to figure out who actually knows what they are doing and who just showed up for the food. Itsuki pushes them anyway, because a cellar full of half-finished experiments is not going to run itself. So can a bunch of students who can barely agree on lunch keep a centuries-old craft alive, or will the whole thing go sour before the first bottle is even opened?
